Big Grandma used to love to get cattails for floral arrangements at Christmas. She'd spray the cattail with hairspray to prevent what happened to the ones in your picture.
Cattails and the plums of pompous grass make a beautiful tall floral arrangement. She even dyed the pompous grass green and red. Don't know how she did that.
